INGREDIENTS

  • 4 cups fresh arugula
  • 1 orange, segmented
  • 1 grapefruit or blood orange, segmented
  • ¼ cup shaved Manchego cheese
  • ¼ cup toasted almonds or pistachios
  • Olive oil, for drizzling
  • Fresh cracked black pepper

Citrus Vinaigrette

  • 2 tbsp fresh orange juice
  • 1 tbsp lemon juice
  • 1 tsp honey or agave
  • 2 tbsp extra virgin olive oil
  • Pinch of salt

INSTRUCTIONS

  1. Prepare the Citrus
    Segment citrus fruit carefully, removing excess pith. Reserve a small amount of juice for dressing.
  2. Assemble the Salad
    Layer arugula on a serving platter. Add citrus segments evenly across the greens.
  3. Add Texture
    Shaved Manchego and toasted walnuts over the top.
  4. Dress Lightly
    Whisk vinaigrette ingredients together and drizzle lightly over the salad just before serving.

    Add freshly cracked black pepper, pomegranate seeds (option) and serve immediately.
