Crispy Hot-Honey Halloumi Tacos

WHY THE PARING WORKS

The margarita’s juicy melon and bright citrus cool the hot-honey heat, while its refreshing sweetness balances the salty halloumi and tangy lime slaw.

INGREDIENTS

For the tacos:

  • 8 ounces halloumi cheese
  • 8 small corn tortillas
  • 1 tablespoon olive oil
  • 2 cups finely shredded purple cabbage
  • ½ cup thinly sliced radishes
  • 1 avocado, sliced
  • ¼ cup fresh cilantro leaves

For the lime slaw:

  • Juice of 1 lime
  • 1 tablespoon olive oil
  • ½ teaspoon honey or agave
  • ¼ teaspoon kosher salt

For the hot honey:

  • 3 tablespoons honey
  • ½ teaspoon red-pepper flakes
  • ½ teaspoon smoked paprika
  • 1 teaspoon lime juice

INSTRUCTIONS

  1. Combine the cabbage and radishes in a bowl.
  2. Whisk together the lime juice, olive oil, honey and salt. Pour over the cabbage mixture and toss well.
  3. Combine the honey, red-pepper flakes, smoked paprika and lime juice in a small saucepan. Warm gently for 1–2 minutes, then remove from the heat.
  4. Cut the halloumi into thick strips and pat dry.
  5. Heat the olive oil in a nonstick skillet over medium-high heat. Cook the halloumi for approximately 2 minutes per side, until deeply golden.
  6. Warm the tortillas in a dry skillet or directly over a low gas flame.
  7. Fill each tortilla with lime slaw, avocado and crispy halloumi.
  8. Drizzle lightly with hot honey and garnish with cilantro.
