Garden Herb & Burrata Salad with Cucumber and Tomato

INGREDIENTS

  • 1 cup cherry tomatoes, halved
  • 1 Persian cucumber, thinly sliced
  • 1 ball fresh burrata
  • 2 tbsp fresh basil leaves
  • 2 tbsp fresh mint leaves
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • Sea salt and freshly cracked black pepper to taste

Optional Garnish

  • Orange zest
  • Toasted pistachios

 

INSTRUCTIONS

  1. Prepare the Vegetables
    Slice the cucumber and halve the cherry tomatoes. Place them in a bowl.
  2. Add the Herbs
    Gently toss the vegetables with fresh basil, mint, and parsley.
  3. Dress the Salad
    Drizzle with olive oil and lemon juice. Season with sea salt and freshly cracked pepper.
  4. Plate the Dish
    Transfer the salad to a serving plate. Tear the burrata and place it on top so the creamy center spreads slightly into the vegetables.
  5. Garnish
    Finish with a little orange zest, additional herbs, and optional toasted pistachios.
