Honey Glazed Carrots

WHY THE PAIRING WORKS

The floral citrus notes of orange blossom highlight the sweetness of the honey glaze and bring a refreshing brightness that lifts the earthiness of the carrots. This pairing creates a light, spring-like balance perfect for transitioning from winter.

INGREDIENTS

  • 1 lb baby carrots, peeled
  • 2 tbsp olive oil
  • 2 tbsp agave syrup or vegan honey alternative
  • 1 tbsp orange juice
  • 1 tsp orange zest
  • ½ tsp ground cinnamon
  • Pinch of sea salt
  • Fresh Parsley, crushed walnuts and mozzarella cheese (optional garnishes)

INSTRUCTIONS

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots with olive oil, agave syrup, orange juice, zest, cinnamon, and salt.
  3. Spread on a parchment-lined baking tray.
  4. Roast for 25–30 minutes, stirring halfway through, until caramelized and tender.
  5. Garnish with fresh thyme. Serve warm.
