INGREDIENTS
1 lb baby carrots, peeled
2 tbsp olive oil
2 tbsp agave syrup or vegan honey alternative
1 tbsp orange juice
1 tsp orange zest
½ tsp ground cinnamon
Pinch of sea salt
Fresh Parsley, crushed walnuts and mozzarella cheese (optional garnishes)
INSTRUCTIONS
Preheat oven to 400°F (200°C).
Toss carrots with olive oil, agave syrup, orange juice, zest, cinnamon, and salt.
Spread on a parchment-lined baking tray.
Roast for 25–30 minutes, stirring halfway through, until caramelized and tender.
