Soy-Glazed Carrot Salad

INGREDIENTS

Serves 2–3

Salad

  • 3 cups carrots (julienned or ribboned)
  • 2 green onions (thinly sliced)
  • ¼ cup cilantro (roughly chopped)
  • 2 tbsp toasted sesame seeds
  • ¼ cup crushed peanuts or cashews (optional for crunch)

 

Dressing

  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp fresh lime juice
  • 1 tsp honey (or maple)
  • 1 tsp sesame oil
  • 1 tsp freshly grated ginger
  • 1 garlic clove (minced)
  • ½ tsp chili flakes (optional)

INSTRUCTIONS

  1. Prep the carrots
    Julienne or shave into thin ribbons for maximum texture and dressing absorption.
  2. Make the dressing
    Whisk together soy sauce, rice vinegar, lime juice, honey, sesame oil, ginger, garlic, and chili flakes.
  3. Toss
    Combine carrots, green onions, and cilantro. Toss with dressing until evenly coated.
  4. Finish
    Top with sesame seeds and crushed nuts. Let sit for 5–10 minutes before serving for best flavor.
